Brunch platter from earlier (some inspo for your weekend😎):
We’ve been eating this Lentil & Parsnip Curry all week. I just love how simple curry appears but always layered with flavors from the Jamaican curry powder, to the fresh ginger, garlic, scallions, thyme, scotch bonnet, pimento seeds, and the natural sweetness from the coconut milk. The parsnips add a nice earthy and sweet tone to the dish as well. A little spinach to add some greenery.
Summer def had somewhere else to be and now Fall is just slowly sliding in. So, let’s get warm and cozy with a large bowl of Ital Gungo Peas Soup loaded with kabocha squash, cho cho (chayote squash), cabbage, green bananas/potatoes, and spinners (dumplings) along with fresh seasoning like thyme, scallion, scotch bonnet, garlic, pimento/allspice berries, etc.
